I made this dish for the Yalumba Harvest Market back in April and everyone loved it. It is so quick and easy to make and it is up to you how hot you want to make it. The satay sauce is just mild in this recipe but if you like it hotter simply add more of my Kasoundi or some minced or fresh chilli.
Cut 1 kg chicken into pieces and marinate with 2-4 dessertspoons of Kasoundi. Soak skewers for 10 minutes in water, then thread onto skewers. Set aside. To make the satay sauce just finely dice a good sized onion. Add 2 dessertspoons of Kasoundi if you want this sauce spicy. Saute till soft and lightly browned. Add 2 great big spoonfuls of peanut butter, crunchy is good. Then add 2 cups of chicken stock and 1 cup of coconut cream. Simmer very gently for 5 minutes. Get yourself one of those great camping barbeque racks and put all the chicken skewers into it and cook over hot coals or on the barbeque plate. Or simply cook them individually. This is a real hit and something different for your next get together! The kids will love them too! Serve with Pilaf style rice. The recipe for Pilaf Rice is on my downloads page.
